Ingredients :

1 slice whole-wheat bread
1 egg
¼ cup mashed avocado
1 tablespoon sliced green onions
1 teaspoon white vinegar
Pepper to taste
1 ½ tablespoons reduced-fat ricotta cheese
2 tablespoons harissa
Salt to taste

Directions :

1. Pour 1 ½ inches of water into a skillet. Place the skillet over high heat and let it come to a boil.
2. Add vinegar and stir. Crack the egg into a bowl and carefully slide it into the water. Cover the pan with a lid and turn off the heat. Let it sit this way for 5 minutes.
3. Meanwhile, toast the bread to the desired doneness.
4. Spread ricotta over the bread.
5. Spread the mashed avocado over the bread followed by harissa.
6. Remove the poached egg from the pan with a slotted spoon and place over the toast. Season with salt and pepper, sprinkle green onions on top and serve.
